Hala Tree Kona coffee is more than just a morning pick-me-up. It’s a journey from the slopes of Mauna Loa to the roasting room in South Kona, to your cup at home or in our cafes on Oahu. It's a story of flavors, aromas, and craftsmanship. The Coffee LAB is our way of bringing this journey into focus and expressing our deep passion for the art and science of Kona coffee.
What Is The Coffee LAB?
The Coffee LAB is a dedicated learning space where coffee professionals and enthusiasts dive deep into the nuances of coffee. It’s a place for experimentation, education, and discovery. Here, coffee beans are roasted, brewed, and tasted with precision. The goal is to understand how different variables affect the final cup.
In The Coffee LAB, you will find:
Top of the line roasting equipment: Our roasting room includes two Aillio Bullet roasters equipped with digital roast logging. These machines allow us to dial in highly specific profiles to explore the impact of small changes in heat application, air flow, and time.
A variety of brewing devices: including Chemex, V60, Kalita Wave, and French Press.
A professional cupping lab environment where coffee tasters evaluate aroma, flavor, acidity, and body.
Educational materials and workshops to help visitors learn about Kona as a coffee origin, how we process our coffee, and the many different coffee varieties growing on our farm.
This environment encourages curiosity and appreciation for the craft behind every cup. It’s a hands-on experience that reveals the complexity hidden in your daily brew.

Chemex - Conical geometry, paired with a heavy woven paper fiber filter make this an excellent choice for brewing bright, floral, and light-bodied coffees.
Kalita Wave 185 - The flat bottom design of the Kalita Wave emphasizes sweetness, body, and rich chocolate flavors. This is the device that took Hala Tree Coffee to the national finals of the US Brewers Cup in 2018.
French press - A full-immersion method that produces a rich, full-bodied cup with more oils and heavy body.
Each method requires different grind sizes, water temperatures, brewing times, and pouring technique. In The Coffee LAB, you can experiment with these variables to find your perfect cup. For example, adjusting the grind size finer or coarser can change extraction and flavor balance dramatically.

One of the most fun events at The Coffee LAB is our Kona Coffee Tasting Experience. Each session explores a flight of three of our 100% Kona coffees grown on our farm on the Big Island.
